Thanks to everyone who donated items to our Small Farms Week Food Drive. We were able to prepare roughly 37 meal bags that were distributed throughout Granville County to individuals and families in need. Below is a picture of some of the bags of food we collected and distributed along with the recipe for the Six Can Chicken Tortilla Soup meal that was in each bag.

Here is the recipe that we collected items during our food drive to provide bagged meals out to a variety of families all across Granville County. The recipe is from the University of Nebraska-Lincoln website.

Six Can Chicken Tortilla Soup – serves 6

1 (15 ounce) can corn, drained

2 (14.5 ounce) cans chicken broth, low sodium

1 (10 ounce) can chicken, drained

1 (15 ounce) can black beans, drained and rinsed

1 (10 ounce) can diced tomatoes with green chilies, drained

6 ounces tortilla chips

3 ounces low-fat Cheddar cheese, shredded

In a large saucepan, combine corn, chicken broth, chicken, black beans, and tomatoes. Bring to a boil. Cover, reduce heat, and simmer until heated through. Serve over or with tortilla chips and top with a little cheese.
