Financial success means different things to different people but managing your income well enough to take care of your needs is important to most. It can also be important to have some money to pay for some of our wants along with saving for future goals. But it does not happen overnight and can require you to develop a plan to help you reach your financial goals over time. A good financial plan can be simple and involve living within your means, saving money for emergencies, and paying your bills on time. Right now, there are a lot of people struggling with finances and the Extension Office wanted to give everyone some tips to help them get started on the right path. Therefore, we are hosting a virtual workshop on Tuesday, July 19th at 12:00 pm and will focus on “Developing a Household & Food Budget”. We will discuss how to develop a food budget, plan budget-friendly meals and shopping strategies, and how to enroll in food and nutrition services (SNAP benefits, formerly food stamps). Fruit Crisp – serves 8 ($1.15/serving)
4 cups berries (fresh or frozen)
1/3 cup plus 1 Tbsp white or whole wheat flour
½ cup oats (old-fashioned or quick-cooking)
1/3 cup brown sugar
½ tsp cinnamon
¼ tsp salt
¼ cup butter, cold
¼ cup chopped nuts, optional)
Preheat oven to 375°F. Thaw berries, if frozen. Do not drain. Mix berries with the 1 tablespoon flour. Grease or spray with nonstick cooking spray the bottom of an 8" round or square pan. Spread berries over bottom of pan. Stir together the flour, oats, brown sugar, cinnamon, and salt. Incorporate the butter or margarine into the flour mixture. Use a fork or your hands to break the butter down into pea-size pieces while pressing it into the flour mixture. It will be easier to spread on the fruit with smaller chunks. Add nuts, if desired. Sprinkle flour mixture evenly over fruit. Bake uncovered for about 25 minutes or until topping is golden and fruit is bubbly.
