Food for Thought: Eat Healthy

Everyone can work on eating healthier by being more mindful about where their food comes from and who may benefit from you buying it. Research shows that eating foods grown nearby or growing it yourself, may lead you to consume more fresh fruits and vegetables. And doing so is one of the most important ways to improve your diet. Food you grow or buy directly from a farmer often tastes better since it is picked while it is ripe and does not have to be shipped to your local grocery store. A diet high in fruits and vegetables will decrease your risk of heart disease, diabetes, obesity, and some types of cancers. Tex-Mex Sweet Potato


Ingredients


  • 1 medium-sized sweet potato
  • 1 Tbsp black beans
  • 2 Tbsp corn salsa
  • 1 Tbsp chopped tomatoes
  • 1 Tbsp Greek yogurt

Directions

Pierce sweet potato with a fork to break the skin. Really wash any remaining dirt off the potato. Put it into the microwave for 8-12 minutes depending on the size. While it’s cooking, combine 1 Tbsp black beans, 2 Tbsp corn salsa bought from the store and 1 Tbsp of chopped tomatoes. Once the sweet potato is cooked, slice it down the middle and fill it with your tex-mex mixture. Finish with a large dollop of plain Greek yogurt on top.
