The N.C. Cooperative Extension of Granville County office just hosted a workshop on Developing a Household and Food Budget. If you missed it, we want to share some tips with you. Some foods can take a big chunk out of your food budget, especially your meats. Don’t forget that there are plant-based proteins that can help you get the nutrients you need and save you money in the process. If time is not a factor in preventing you from cooking healthy meals, then to save some money we recommend cutting out convenience foods such as pre-cut vegetables or single-serving snacks. There is always an extra cost for convenience. And try to purchase fresh produce that is in season. It helps if you take the time to plan your meals, make a list and stick to it without purchasing items on impulse. This will help you reduce the amount of food you waste which can add up in your wallet. In my home, we create menus around the foods that I already have on hand and find recipes for the week that use the same ingredients. These are just a few tips to help you get the most out of your money while eating healthy.

Baked Potato Crisps

Recipe  – serves 4


  • Vegetable oil cooking spray
  • 1 large sweet potato (~1/2lb), peeled
  • 2-3 red potatoes (~1/2lb), scrubbed with peel on
  • 2 Tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper


Preheat oven to 400°F. Spray a large baking sheet with cooking spray. Slice the potatoes very thinly. Place potatoes in a bowl; add the oil, salt and pepper. Toss to coat. Transfer the potatoes to a baking sheet. Spread them out in a single layer. Bake for 10 minutes; turn the potatoes over. Bake for an additional 5-10 minutes, or until the potatoes are slightly crisp and golden brown.
